Recipe Notes

  • You can add 1/4 to 1/2 teaspoon of vanilla extract or almond extract or your favorite baking extract to the batter, if desired.
  • If you want the shortbread to be gluten-free, use gluten-free flour.
  • You will need two shallow round baking dishes or tart pans for this recipe. You can cut this recipe in half, if you prefer.
  • Store shortbread in an airtight container.

Here’s how to make it:

  1. In a large mixing bowl, whisk together the flour and sugar.
  2. Using a pastry blender or two forks, cut the butter into the flour-sugar mixture. Keep working the dough until it forms a ball. Divide the dough into two equal portions.
  3. Press each half of the mixture into a shallow round baking dish or tart pan. Prick the surface of the dough all over with a fork.
  4. Bake in a preheated 325-degree F oven for about 30 to 40 minutes or until it is light brown.
  5. Cut into triangles and allow to cool. Sprinkle with additional granulated sugar, if desired.
